Welcome to Ambrosia: wine, AI and new conversations

We're opening this blog with one idea: wine is a conversation, and we want to help it start again.

A blog’s first article is always a manifesto. Better get it out of the way.

Ambrosia exists to bring wine back to the centre of the table — not as something to be drunk in a rush between two courses, but as a living conversation between those who make it, those who serve it and those who drink it.

Three products, one obsession

Over the past months we’ve built three tools that now live on three subdomains of this site:

  • Winelist — the interactive wine list that tells stories, guides and engages guests at the table, with Dioniso, our AI sommelier.
  • Pairbuilder — a free food-and-drink pairing generator: upload your menu and drinks list, AI proposes the pairings, export as PDF.
  • Experience — tasting events where wine, play and AI meet, formats designed for wineries and restaurants that want to build community.

Each one solves a piece of the puzzle. Together, they sketch a hypothesis of the wine restaurant of the future: less friction, more story, more dialogue.

What you’ll find on this blog

Three things, in this order:

  1. Stories about wine and wineries — what catches our eye in territories, producers, bottles. No 100-point scores.
  2. Pairings and craft — practical guides for restaurateurs and sommeliers, often born from conversations with the people who use our tools.
  3. AI applied to wine — notes, reflections and some technical news about how we’re building our products, and what AI can (and can’t) really do in this field.
